COURGETTE JAM

1.2 kg courgette (chopped in small pieces)
Roughly 5 cms root of grated ginger
zest of one orange
Juice ˝ orange
1 kg Béghin Say, *Gelsuc with white or blonde sugar.

Bring quickly to the boil and boil for 7 minutes while stirring.

Bottle immediately and allow to cool.

* Gelsuc is the trade name of jam sugar with pectin made in France. Their direction on recipes is to boil for 7 mins.  Different types of jam sugar may vary in cooking time. I invented this as I went along and it turned out really well in fact one of my French neighbours asked for the recipe so here it is. Diane
