| 1 | Place ribs in large pan, cover with cold water and bring to the boil. |
| 2 | Lower the heat and simmer for 10 minutes. |
| 3 | Combine the Marinade ingredients in a bowl and mix well. |

Place the pork spare ribs in a large shallow glass dish and pour over the well mixed marinade. |
| 5 | Cover & refrigerate for minimun of 4 hours, preferably overnight if possible. |

(a)Place the marinated pork spare ribs on a rack in a large roasting pan and cook in oven at 180°C for about 40 minutes until browned and tender |
| or(b) grill on the Barbeque. | |
| 7 | During cooking baste the ribs often with the pan juices/marinade. |
N.B. These were the best spare ribs we have ever had but maybe
because we have not had them for ages they were extra special!
