Swede, Carrot and Potato Mash

Serves 2 to 3

1/2 medium/large swede
2 medium potatoes
2 to 3 medium carrots
generous knob of butter
3 tablespoons milk or crème fraîche
3/4 teaspoon freshly ground black pepper

Peel the swede and cut into 2cm chunks.
Peel the potatoes and carrots. Cut into chunks.
Boil the vegetables for up for about 20 minutes, until soft.
Drain most of the water, leaving a little in the pan.
Add the milk and butter. Mash well. Mix in the pepper.

N.B. A sliced onion cooked with the vegetables makes a nice change to this recipe.
